Making 45 servings

Multiply the quantities by something between 7 and 8, so:

2 lb bulgur
2 t nutmeg
¾ lb celery
7½ lb spinach
4 lb onions
5 T grated ginger
7 cloves garlic
just under 2 lb Brie
3 c lemon juice
2 c olive oil
1 lb Cheddar, grated

Special Instructions

Just make sure you've got a salad bowl big enough to handle this.
